Bluefish with Garlic Mayonnaise

“Bluefish with Garlic Mayonnaise”

Scale and fillet a bluefish (I use a knife and remove the head).

Ingredients:

  • Bluefish 
  • Mayonnaise (homemade or store bought) 
  • Fresh garlic 

Instructions:

Preheat oven to 350° F. Place fillet skin side down on foil in a roasting pan (the foil keeps the skin from sticking to the pan). Chop garlic and add to mayonnaise to taste (this is much better with homemade mayonnaise, but it also works with good quality store bought). Spread garlic mayonnaise generously on fish fillets and bake until done. If the mayonnaise has not lightly browned by the time the fish is cooked, place it briefly under the broiler. Simple and delicious.
